From the moment you arrive, The Red Booth experience signals that the evening will unfold on its own terms. There is no waiting, no uncertainty, and no sense of being part of a rotation. Your booth is guaranteed, prepared in advance, and reserved exclusively for you, creating an arrival that feels intentional rather than transactional. Soft red tones surround the space, long-stem roses already placed in a vase at the table, setting the tone before the first glass is poured. A chilled bottle of Champagne awaits, ready to be opened at your pace, followed by a complimentary Valentine’s welcome cocktail, vibrant red, delicately garnished with rose, designed to mark the beginning of the evening. What follows is a thoughtfully composed dining experience designed to unfold over up to two and a half hours, a rhythm chosen to feel generous and complete. Time moves forward, but never abruptly. Conversation settles in. The outside world fades.
About the Menu:
The five-course tasting menu is created entirely off-menu and available only to the booths.
The evening begins with warm baby baguette and cherry butter, followed by an amuse of smoked duck breast with tarragon potato pavé, pomegranate-laced foie reduction, and fresh sorrel.
Perigord truffle burrata arrives next, layered with crispy maitake, endive, and sherry gastrique, giving way to richer moments like delicate Lobster, lightly steamed with Pernod with carrot and hazelnut.
A brief intermezzo of strawberry Champagne sorbet refreshes the palate before the main course: tallow-poached 7x filet, finished with green chili emulsion, caviar, and confit chanterelles.
Dessert closes the menu with Cupid’s Indulgence, chocolate, merlot, and strawberry—lingering just long enough to feel unforgettable.
About the Experience:
Service throughout the evening is intuitive and unintrusive. Glasses are refreshed effortlessly. Courses arrive with natural pauses in conversation. The pacing is deliberate, ensuring every dish has space to be enjoyed without ever feeling rushed. Two and a half hours pass not by watching the clock, but by letting the evening unfold as it was designed to. Personal touches elevate the experience beyond the table. A handwritten poem, created specifically for the couple and presented on EDGE letterhead, awaits in the booth—a keepsake meant to be taken home. A Polaroid or printed photograph captures the moment, placed in a small EDGE-branded frame as a reminder of an evening shared. As the night draws to a close, chocolate-covered strawberries are prepared for takeaway, extending the experience beyond the dining room. Every element is intentional. The roses, the Champagne, the personalized details, the carefully paced menu—all curated to create an evening that feels private, considered, and rare. With a limited number of booths available, this is not simply a reservation, but a moment set aside in advance, designed to be remembered long after the last sip and the final course.
